Is a healthy recipe with step-by-step pictures and instructions given below. It is very simple and easy to make with fewer ingredients. We usually hate to eat bitter gourd because of its bitter nature but if we use some tips we can get rid of bitterness. This sliced gourd is simmered with spices, onion, and tomato-based curry, to balance the bitterness we can add tamarind juice and jaggery as per our taste. It goes well with chapati or roti and can be served as an accomplishment with rice, or curd rice. 

 

ABOUT BITTER GOURD:

Bitter Melon can be consumed in the green or early yellowing stage. It is valued for its health benefits and is widely used in cooking. Bitter gourd is also known as Bitter Melon, Goya, Bitter Apple, Bitter Squash,   Hagalakayi (Kannada), Kakara (Telugu), Pagarkay or Pavakay (Tamil), Karela (Hindi), Pavaykka / Kaippaykka (Malayalam). This gourd differs substantially in shape, size and bitterness of the vegetable.

 

Ingredients:

Bitter gourd, onion, oil, curry leaves, tamarind juice, red chili powder, cumin seeds, garlic, sambar powder, coriander powder, salt to taste, water as required, jaggery.

FAQ:

How to remove bitterness?

Can be soaked in cold water for 10 to 15 minutes and then drained of those strong flavors. Even we can soak it in buttermilk for 15 minutes and rinse it 2 to 3 times and discard the excess water. One more tip is to dry roast by adding little oil for 5 minutes on low flame. Or we can soak in tamarind juice for 10 minutes and then discard the drained water and then rinse 2 times.

 

Can Pregnant Women eat?

It is better to avoid eating bitter gourd during pregnancy.

 

Should I peel bitter gourd?

Usually, it is not peeled because the outer skin is edible. So, before cooking rinse, then remove the seeds, cut them into pieces, and its ready to cook.

 

Should we remove seeds from a bitter gourd?

Yes, because it reduces the bitterness of the final dish.

 

Methods:

How to make Bitter Gourd Curry:

  1. First clean and cut the bitter gourd into pieces.
  2. Tip: In a mixing bowl add cut bitter gourds, and rock salt. Allow it to rest for 15 minutes and then discard the released excess bitter gourd juice.,
  3. Now heat a pan and add in oil, cumin seeds, and chopped garlic, and saute till the garlic becomes golden brown.
  4. Then add in onions, and curry leaves, and saute till the onions become soft.,
  5. Later add turmeric powder, red chili powder, coriander powder, and sambar powder. Saute it for 2 minutes.
  6. And then add in bitter gourds. and give a mix.
  7. And then add in tamarind juice, little water, and salt to taste. And then close the lid and cook till the bitter gourds are nicely cooked
  8. Add in jaggery as per your requirement. Adding jaggery is optional.
  9. Add in grated coconuts and give a mix.
  10. Finally the bitter gourd curry is ready to serve.

  • Pinch of turmeric powder
  • ¼ tsp Red chili powder
  • ½ tsp Coriander powder
  • ½ tsp Sambar powder
  • 1 tbsp Tamarind juice
  • ¼ cup Water adjust as per requirements
  • 1 tsp Jaggery
  • Salt to taste
